Banana Cake Recipe

  • An incredibly moist banana cake with cream cheese frosting, this is the cake to serve at the end of memorable meals.
  • A luscious banana puree keeps it moist, and the sinfully delicious cream cheese frosting envelops the golden hued cake.
  • The aroma of vanilla and bananas will permeate your kitchen, tempting you to eat dessert first. Don't give in! This is one cake that's worth getting through a meal for.


  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 2 large eggs, beaten
  • 2 cups flour, sifted
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup milk
  • 1/4 teaspoon vanilla
  • 3/4 teaspoon baking soda (add to pureed bananas)
  • 3 pureed bananas, very ripe
Cream Cheese Frosting :

  • 1/2 stick butter, softened
  • 8 oz. cream cheese, softened
  • 1 box powdered sugar (1 lb.)
  • 2 teaspoons vanilla extract
  • Preheat oven to 350 degrees. Grease and flour a 9x13" baking pan or two 9" layer cake pans.
  • Cream butter, sugar and eggs. Sift flour several times, then add the salt and baking powder to the flour.
  • To the creamed butter mixture, add the milk and flour (alternating, beginning and ending with flour).
  • Add vanilla and mashed bananas (with the baking soda added to the bananas) to this mixture.
  • Bake layer cakes (9") for 25-30 minutes, oblong (9x13") for 35-40 minutes.
Frosting Method :
  • Mix cream cheese and butter until smooth, add sugar and vanilla and blend well. Spread on cooled cake.

Banana Muffin Recipe

  •  3 or 4 Large bananas, mashed (the more bananas the moister, so I use 4)
  • 1/2 cup white sugar (original recipe calls for 1 cup, but I don’t like them too sweet)
  • 1 slightly beaten egg
  • 1/3 cup melted margarine or butter
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together! Pour into greased muffin tins, and bake in 350 degrees F oven for approximately 20 minutes. Enjoy!
  • These are much more flavourful the next day, and they freeze very nicely too!

Banana Nut Cake Recipe

  • 2 eggs
  • 1 teaspoon baking soda
  • 4 tablespoons buttermilk
  • 1/2 cup butter
  • 1 1/2 cups white sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3 ripe bananas, mashed
  • 1 cup chopped pecans
  • 3 tablespoons butter, softened
  • 2 cups confectioners' sugar
  • 3 tablespoons heavy whipping cream
  • Pecan halves (optional)
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.
  • Separate the eggs and set aside.
  • Stir the baking soda into the buttermilk. Cream 1/2 cup of the butter or margarine with the white sugar. Add the egg yolks, and vanilla, beating well. Add flour alternately with the mashed bananas. Stir in the buttermilk mixture.
  • Beat the egg whites until stiff. Stir the pecans into the cake batter then fold in the egg whites. Pour batter into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until cakes test done. Let cakes cool in pans.
  • To Make Icing: Cream 3 tablespoons butter or margarine with the confectioners' sugar. Stir in the heavy cream until well blended. Spread icing on to cooled cake layers. Top with pecan halves if desired.
Chocolate Banana Cake Recipe

  • 1/2 cup margarine, softened
  • 1 1/4 cups brown sugar
  • 2 eggs
  • 3 squares unsweetened chocolate, melted
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 1/2 cups mashed, ripe bananas
  • 1/2 teaspoon vanilla
  • Cream margarine and brown sugar until light and fluffy. Add eggs one at a time. Beat thoroughly after each. Stir in the cooled melted chocolate. Sift dry ingredients together and add to the batter alternately with the mashed bananas; stir in vanilla. Pour into 2 greased and floured 9-inch layer cake pans. Bake in preheated 350 degree oven for 35 to 40 minutes, until cake tests done. Frost with a fluffy white frosting.
Banana Bundt Cake Recipe

  • 1 box (18.25 ounce size) yellow cake mix
  • 1 small box vanilla instant pudding
  • 3/4 cup vegetable oil
  • 3/4 cup water
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter extract
  • 1/2 cup nuts (optional)
  • 2 mashed bananas
  • Mix all ingredients together for 4 to 6 minutes. Pour into greased and floured Bundt pan. Bake at 350 degrees F for 35 to 40 minutes.
Banana Bread Recipe

  • 1 cup granulated sugar
  • 1 package (8 ounces) cream cheese, room temperature
  • 2 ripe bananas, mashed (about 1 cup mashed)
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups biscuit mix (Bisquick, Pioneer, etc.)
  • 1/2 cup chopped pecans or walnuts
  • In a large mixing bowl, cream sugar and cream cheese until light and fluffy. Beat in mashed bananas, the eggs, and vanilla. Stir in biscuit mix and pecans just until ingredients are moistened. Pour into a greased 9x5x3-inch loaf pan.
  • Bake banana bread at 350° for 1 hour, or until wooden pick comes out clean when inserted in center. Cover with foil the last 15 minutes of baking if too brown.
  • Cool banana bread before slicing.
Easy Banana Cake Recipe

(2 bananas used for this recipe)
  • ¼ cup milk
  • 1 teaspoon lemon juice
  • 250g (8oz) bananas
  • 1 cup sugar
  • 2 cups self raising flour
  • 2 eggs
  • 60 g (2 oz) butter
  • Combine milk and lemon juice. Peel and mash bananas, put into bowl of electric mixer. Add sugar, sifted flour, lightly beaten eggs, softened butter and combined milk and lemon juice. Beat on low speed until combined, then beat on medium speed 2 minutes. Turn mixture into greased 23 cm x 12 cm (9 in x 5 in) loaf tin which has the base lined with greased greaseproof paper. Bake in low to moderate oven approx 1 ¾ hours or until cooked when tested. Cool in tin 10 minutes before turning out on wire rack to complete cooling.
Carrot Cake Recipe

  • 4 eggs
  • 2 teaspoons baking powder
  • 2 cups sugar
  • 1 cup pecans, chopped
  • 4 cups grated carrots
  • 1 cup vegetable oil
  • 2 cup flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
Cream Cheese Frosting: 
  • 1/2 stick butter, softened
  • 8 oz. cream cheese, softened
  • 1 box powdered sugar (1 lb.)
  • 2 teaspoons vanilla extract 

  •  Combine sugar, baking powder, flour, cinnamon and baking soda in a bowl. Add in the eggs and oil.
  •  Mix until just blended and then add the carrots and pecans.
  • Bake at 375F to 400F for 35 to 40 minutes or until done.
Frosting Directions: 
  •  Mix cream cheese and butter until smooth, add sugar and vanilla and blend well. Spread on cooled cake.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
  • In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  • In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  • Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Ripe bananas still on the counter means it is time to bake. Oftentimes I take banana bread which is perfect in the sunrises with yogurt and fresh fruit. But when I desire a delicious and quick weekday dessert this Cocoa Banana Cake is what I turn to. This recipe is one I adapted from Canadian Jane Rodmell's Best Summer Weekends Cookbook. It is lovely. It compounds the sweetness of ripe mashed bananas with chocolate powder and to make it even more than chocolately, the cake is frosted with a smooth and creamy Chocolate Ganache. This would also be the perfect cake for family gathers as it feeds up to xvi individuals.


  • 2 cups (400 grams) granulated clean sugar

  • one 3/4 cupfuls (245 grams) all-purpose flour

  • 3/4 cup (75 grams) unsugared chocolate powder (regular or Dutch-processed)

  • one 1/2 teaspoons baking powder

  • 1 1/2 teaspoons baking soda

  • 1/2 teaspoon salt

  • 2 great eggs

  • 1 cup mashed ripe bananas (about two medium sized bananas)

  • 1 cup (240 ml) warm water

  • 1/2 cup (120 ml) milk

  • 1/2 cup (120 ml) corn, safflower or canola oil (or other flavorless oil)

  • 1 1/2 teaspoons pure vanilla extract

  • Cocoa Ganache Frosting:

  • 8 oz. (227 grams) tasty or bitter chocolate, cut into small bits

  • 3/4 cup (180 ml) heavy beating cream

  • 1 tablespoonful (14 grams) unsalted butter


Chocolate Banana Cake: Preheat oven to 350 levels F (180 degrees C) & set rack in the center of the oven. Butter, or spraying with a not stick vegetable spray, a 9 x 13 inch (23 x 33 cm) pan. Put aside.

Step 1:

In a large bowl whisk together the refined sugar, flour, cocoa powder, baking powder, baking soda, & salt. Set aside.

Step 2:

In another great bowl, whisk together the eggs, mashed bananas, H2O, milk, oil, & vanilla extract. Add the wet ingredients to the dry ingredients and stir, or whisk, until combined. You will notice that the batter is quite thin. Pour the batter into the prepared pan and bake for about 35 to 40 minutes or until a toothpick entered in the central of the cake comes out clean.

Step 3:

Withdraw from oven and let cool on a wire rack. When completely cooled down, frost with the Ganache.

Step 4:

Ganache: Place the chopped chocolate in a medium sized stainless steel, or heatproof bowl. Set aside. Heat the cream and butter in a medium size saucepan over medium heat (can as well be heated in the microwave). Take just to a boil. Immediately pour the boiling cream up the chocolate and allow to stand for 5 minutes. Stir until smooth. When Ganache has totally cooled, beat until soft and fluffy.

Step 5:

Then spread the frosting on top of the cake. Can garnish with dried banana chips.

Serves: four

  • 125g butter
  • 1 cupful (200g) white sugar
  • 2 eggs
  • 1 teaspoonful vanilla effect
  • 2 tablespoons milk
  • 1/2 teaspoon bicarb soda
  • 1 1/2 cups (185g) self-raising flour

Planning method

Step one:

Preheat oven to 190 level C. Cream butter and refined sugar in a bowl until it turns a light colour. Step By Step add beaten eggs one at a time. Crunch banana on a plate with vanilla essence. Mix bicarb soda water in a cup with the milk.

Step two:

Add your mashed banana mixture into the creamed butter and sugar & mix until blended. Alternately add your flour and your milk mix until just mixed.

Step three:

Pour mixture into a lubricated and lined loaf can and broil for 45 min or until cake springs back from a touch in the center. Cold on cake rack.

The recipe took a little tweaking with a small extra butter...
